Roasted by Us !
The roasting of coffee plays a key role in obtaining a good coffee, different stages can achieve the desired qualities: taste quality, but also health quality.
We do not add water or additives.
All the coffee beans are roasted slowly. They are grilled gently in a gas oven for 20 minutes.
The temperature does not exceed 190 degrees. This makes it possible to extract all the flavors, without altering the quality of the coffee.
We creak only a small amount of grain at a time. To allow each grain to reveal all its flavors!
The grains are cooled quickly so as not to lose any aroma. The coffee then gives off a blue smoke: it signals the presence of a gas carrying aroma to define the taste of coffee.

Arabica coffee comes from one of the most widespread coffee varieties in the world. It takes its Arabica name from the Arabian Peninsula.
There are almost 200 types of arabicas classified in subspecies such as Maragogype, Moka, themselves sub-divided into several variants such as Djimmah, Sidamo, Harrar ...
The Arabica coffee also needs a lot of moisture and shade. This is why we often find large trees in the middle of plantations to protect them from the sun and to keep the humidity in the environment.
Arabica is grown on soils rich in acids and minerals, essential elements that will contribute to its future incomparable aromas. It blooms after each rainy season and its fruit takes nine months to ripen. He then gives oval coffee beans of greenish to yellow colors.
Arabica is distinguished by its great smoothness, its more developed aromas than Robusta and its low caffeine content.

Do you sometimes see the words "pure blend" or "pure origin" on your coffee packages, without really knowing what it is? Rest assured, we will try to clarify all this for you.
A "pure blend" is a coffee made up of 100% of a single vintage, of a single origin. For example, our Compagnia dell'Arabica Kenya coffee shop or our Alter Eco Ethiopia coffee shop are "pure blends" because they are made from single-raw coffee beans that are harvested from one and the same land. In contrast, the Carte Noire 100% Arabica is not. Indeed, several coffee are mixed in the Black Card, so as to obtain a coffee always taste identical over time. As you will have understood, the same type of coffee can give beverages to different tastes from one year to another, weather conditions are changing. The taste of a "pure blend" is very generally fine and of character with some notable specificities (acidity point, fruity notes) according to the land where they are harvested ... Conversely, coffees made from blend of different origins are designed to produce coffee with round aromatic profiles in the mouth and regular over time.

Robusta coffee takes its name from the sturdiness and strength of its tree. This coffee tree can reach nearly ten meters and is resistant to many diseases, insects or extreme weather conditions.
He is afraid of frost. Robusta coffee is cultivated in the plains at a lower altitude than Arabica, between 0 and 800 meters above sea level in a warm climate between 24 and 30 ° C and often in full sun. In these conditions and thanks to its very rapid growth, this species of coffee is easier to cultivate than arabica.
Robusta flowers bloom irregularly and the fruit ripens after ten to eleven months. Robusta coffee grows yellow to brown.
Robusta has a less developed aroma, a more bitter and full-bodied taste than arabica. Due to its earthy and astringent flavor, it is unappreciated by high quality coffee growers. In addition, Robusta coffee contains twice as much caffeine as Arabica coffee or 3% on average.
